Jerk Chicken

4 Cloves of garlic
3 Jalapeno peppers
2 tb Ground Allspice
1 tb Minced ginger
1 tb Salad oil
1 ts Ground nutmeg
1 ts Salt
1 Chicken, whole
3/4 lb Ribs, beef or pork

Place all the condiments (8) into a blender and puree until it forms a paste.

Rub the paste on to the meat and cover with plastic wrap.

Refrigerate for 24 hrs. Remove the plastic wrap.

Place the meat on the grill in a covered BBQ next to a pan filled with water and roast over low coals for 4 to 5 hours.

Remove meat from grill and let stand for 15 minutes before carving and serving
