3 1/4 lb Pork, minced
1 lb Fresh white bread crumbs
1 ts Fresh ground pepper
Grated rind of 1/2 lemon
1/2 ts Grated nutmeg
6 Fresh sage leaves chopped
1/2 ts Chopped winter savory
1/2 ts Dried marjoram
Mix the pork with the other ingredients in a large bowl. Add enough water to make a mixture with a soft piping constistency. Fill sausage skins. Allow sausages to mature overnight..
