Pork Fried Rice

2 tb Oil
1/2 lb Pork, cut in strips
1/2 ts Sugar
1/2 ts Salt
1/2 c Green onions, thinly sliced
1/2 c Celery, thinly sliced
2 c Cold cooked rice
1 c Fresh Bean sprouts
3 tb Soy sauce
3 Eggs, lightly beaten

Heat oil in uncovered Wok, at 350'. Add next 3 ingredients; stir fry 2-3 minutes. Add green onions and celery; stir-fry one minute. Add rice and bean sprouts; stir fry 30 seconds. Add soy sauce; stir to mix. Make well in center of rice; pour in beaten egg; allow to set; scramble with spatula; stir into rice. Serve immediately.
