Greek Honey-lemon Pork Chops

2 tb Honey
Finely grated zest - 1 lemon
2 tb Lemon juice
1 tb Olive oil
1 tb Chopped fresh mint OR 1/2 ts -- Dried leaf mint; crushed
1/2 ts Salt
1/4 ts Ground hot red pepper
4 Rib pork chops (about 1 3/4 - lbs, 3/4-inch thick)


Prep: 15 minutes Refrigerate: 4 hours Grill or Broil: 10 to 12 minutes Cost: $ 1.67 per serving.


Whisk together hones, lemon zest and juice, olive oil, mint, salt and pepper in small glass measuring cup.


Place chops in glass baking dish. Pour marinade over; turn to coat. Cover; refrigerate at least 4 hour or overnight, turning occasionally.


Grill or broil 4 inches from heat 5 to 6 minutes per side or until cooked through. Serve with summer squash.
