2 Pork Loin, 2 lbs each, tied
Pepper, freshly ground
Preheat oven to 500. Rub the pork loin with the salt and pepper. Place on rack in roasting pan. Bake for 15 minutes, immediately turn oven down to 250. Bake for additional 5 hours, turning meat every hour. At end of oven time, remove to barbecue or smoker. Smoke over hickory chips for 15 to 30 minutes. Slice and serve with barbecue sauce.
