Chile Verde

2 lb Pork;lean cubed
1/2 c Water
2 Garlic;cloves
1 Onion;chopped;
1 c Tomatillos;canned whole
1 ts Coriander;ground seeds of
1 cn Green Chiles;chopped mild
2 tb Cilantro;chopped fresh

Cook pork and garlic in 1/2 cup water until all the water is absorbed. Discard garlic; let the pork brown in its fat for a few minutes. Add the onion and saute till translucent. Add the tomatillos and the chiles, cover and simmer for 30-40 minutes, until pork is tender. Just before serving, add the chopped cilantro, salt and pepper to taste, stir well. Serve with SALSA FRESCA. (NOTE: If tomatillos are not available, substitute canned whole tomatoes).
