Peachy Pork Picante

2 lb Boneless pork; cut in 3/4" cubes
2 tb Taco seasoning mix
4 ts Vegetable oil
16 oz Chunky salsa
2/3 c Peach preserves
Rice; cooked, hot

Coat pork with taco seasoning. Heat oil in large non-stick skillet over medium-high heat; add pork and cook to brown, stirring occasionally. Add salsa and preserves to pan; lower heat; cover and simmer for 15-20 minutes. Serve over rice.
