Black Bean and Sausage Posole
12-oz. pkg. light ground turkey and pork sausage
2 x 14-1/2 oz. cans reduced-sodium chicken broth
15-oz. can black beans, rinsed and drained
14-1/2 oz. can golden hominy rinsed and drained
14-1/2 oz can Mexican-style stewed tomatoes
1 c Frozen loose-pack diced hash brown potatoes
1/2 c Chopped green sweet pepper
1/2 c Chopped onion
1 Clove garlic, minced
1/2 ts Chili powder
1 ts Dried oregano, crushed
In a large saucepan brown sausage; drain off fat. Stir in broth, black beans, hominy, tomatoes, potatoes, green pepper, onion, garlic chili powder, and oregano. Bring to boiling; reduce heat. Cover and simmer for 30 minutes. Makes 6 main-dish servings.
