Stir-fried Pork and Cucumbers

1/2 lb Lean pork
1 tb Soy sauce
2 Cucumbers
2 tb Oil
1/4 ts Salt
3 dr Sesame oil; more or less

Slice pork thin against the grain. Add soy sauce to pork and toss. Slice cucumbers thin, but do not peel.

Heat oil. Add pork and stir-fry until it begins to brown (about 3 minutes).

Add cucumbers and salt; stir-fry 1 to 2 minutes. Then cook, covered, over medium heat until done (about 1 to 2 minutes more). Sprinkle with sesame oil and serve at once.

VARIATION: Use 1 cucumber and 1/2 cup bamboo shoots, sliced thin. Add as in step 3.
