Char Siu (red Roast Pork)

1 lb Pork; lean
3 tb Ginger; crushed
1/2 c Green onion; cut
1/2 c Onion; sliced
6 Garlic cloves; crushed
1 tb Honey

Pork Rub Mixture
1/2 ts Salt
1/4 c Sugar
1/3 c Soy sauce
2 tb Sherry
1 ts Chinese 5 spice
2 ts Red coloring (liquid)

Rub pork with rubbing mixture. Add ginger, green onion, garlic, and honey. Let stand 1/2 hour. Roast in 425 degree oven for 15 minutes. Baste and continue cooking at 375 degrees for 30 minutes. Remove and use as needed. (Char siu is used sparingly in Saimin, Fried rice, Fried noodles, and many other oriental/local style dishes). The "rubbing mixture" also gives flavor to chicken.
