1 lb Cauliflower
5 oz Lean pork
2 tb Celery dices
1/2 c Pineapple dices
1 pk Curry powder
2 Cloves garlic; mashed
3/4 c Coconut juice
1/2 ts Salt
1 ts Light soy sauce
1/2 c Water
Cut the cauliflower into flower-like shapes. Scald in boiling water. Take out and drain dry. Slice the lean pork and marinate with the seasonings. Fry in oil, take out and leave for later use. Saute the mashed garlic and fry with curry powder. Add water and the seasonings to make a thick sauce. Put in the cauliflower, pork slices and coconut juice and cook together. Add the pineapple dices and celery dices. Dish up and serve.
