Crown Roast Of Pork

Crown roast of pork; (8lb)
Dried thyme
Salt and pepper
1/2 c Dark molasses
1/2 c Soy sauce


Rub pork inside and out with thyme, salt and pepper, to taste. Place roast on rack in large roasting pan. Mix molasses and soy sauce in small bowl. Brush some over roast. Roast in 350 degree oven for about 2 and a half to 3 hours or until done. Meat thermometer should read 170 degrees when fully cooked. A good rule of thumb is to roast about 20 to 25 minutes per pound. Baste with molasses mixture during roasting. To prevent bone tips from burning, wrap them in foil. Serve with chutney (see previous recipe). Yield: 6 servings.
