Black Bean Soup
2 c Black beans -- soaked
4 qt Water
3 Whole cloves
1 Whole onion -- peeled
1/2 lb Lean beef -- diced
1/4 lb Salt pork -- prepared
1/8 ts Cayenne pepper
1/2 c Sherry
Salt and pepper -- to taste
Rinse beans and sort. Soak for 2 hours. Drain. -Rinse the salt pork. Cut the rind several times. Rinse some more. -In a large saucepan place the black beans and the water. -Stick the whole cloves into the whole onion and add it to the beans. -Add the diced beef, salt pork, and cayenne pepper. Bring the liquid to a boil. Cover the saucepan, reduce the heat to low, and simmer the ingredients for 3 hours, or until the beans are tender. Skim off any foam that appears. -Add the sherry, salt, and pepper.
