Corn Chowder 2 oz Bacon or salt pork
2 sl Onion
1 1/2 c Diced raw potatoes
2 c Fresh corn; cut from the cob, OR No. 2 tin cream style corn
3 c Hot water
3 tb Butter
1 c Evaporated milk OR coffee cream
2 1/2 ts Salt
1 ds Pepper
2 ts Finely chopped parsley OR paprika
Chop bacon and onion coarsely and put into soup kettle; saute until onion is soft and bacon done. Add potatoes, corn, and water, cover and simmer until potatoes are tender. Add butter, milk, and seasonings; reheat to boiling and serve piping hot with a little parsley sprinkled over the top, or a few dashes of paprika. 5 servings
