Glazed Pork Loin Place a 4- to 5-pound boneless pork loin roast on a rack in a shallow roasting pan. Insert meat thermometer. Roast at 325 for 2 1/4 hours. Meanwhile in 8-inch skillet, heat and stir 1/2 cup sugar till a deep golden brown. Slowly stir in 2/3 cup boiling water. Stir in 1/3 cup vinegar and 1 teaspoon hickory smoked salt. Boil gently till mixture is reduced to 1/2 cup, about 10 minutes. (Mixture thickens with cooling.) Brush pork with vinegar mixture. Continue roasting till thermometer registers 170, 15 to 30 minutes more; brush often with vinegar mixture.
