Corn Chowder 1/2 lb Salt pork cut into julienne strips
1/2 Green pepper, chopped
2 tb Butter or margarine
1/8 ts Gr. black pepper
3 tb Minced parsley
1 Onion, peeled and chopped
1 Potato, peeled and diced
1/2 ts Salt
2 10-oz pkgs. frozen kernel corn
2 1/2 c Milk or light cream
Render the salt pork slowly in a large heavy skillet. 2. Add the onion, green pepper, potato and butter or margarine and saute' slowly 15-20 minutes or until potato is tender. 3. Add salt, black pepper and corn, and heat, stirring, until corn is thawed.
Stir in parsley and milk or light cream, and simmer gently, stirring until corn is done. Do not boil. Serve at once. Makes 4-6 servings.
