Cooked Swamp Cabbage

4 Swamp cabbages (about 6" long & 2" wide)
1/2 lb Salt pork; cut in pieces
3 c Water
1 c Light cream
2 ts Black pepper
1 ts Salt

NOTE: Two 14-ounce cans of hearts-of-palm can be used in this recipe instead of fresh swamp cabbage.

Slice swamp cabbage 1/4-inch thick and place in a saucepan with salt pork and water. Bring to full boil, then decrease heat and let simmer for one hour. Add cream and season with about half the salt and pepper. Let cook 5 minutes longer. Adjust seasoning if necessary.
