Apple-kraut Pork Chops
1 tbsp. vegetable oil
2 (1/2 inch thick) pork chops
1 c. drained sauerkraut
1/4 c. water
1/2 c. applesauce
2 tbsp. chopped onion
1 tbsp. brown sugar
1/8 tsp. pepper
1/2 tsp. caraway seeds (optional)
Heat oil in a heavy skillet; brown pork chops on both sides. Remove pork chops from skillet and set aside. Drain off pan drippings. Add sauerkraut, water and caraway seeds to skillet, stirring well. Place pork chops on top. Combine remaining ingredients and spoon over pork chops. Cover; reduce heat and simmer 35-40 minutes. Yield: 2 servings.
