Hawaiian Sweet and Sour Pork

2 tbsp. oil
2 lbs. lean pork
1 1/2 c. water
1 tsp. salt
Dash red pepper
2 green peppers, cut in strips
1 can pineapple chunks, drained (reserve juice)
1/2 c. onions, cut in rings
1/4 c. cornstarch
1/3 c. sugar
1/4 c. vinegar
4 tsp. soy sauce
3/4 c. pineapple juice reserved

Combine oil and meat. Cook over medium heat until meat is brown on both sides. Add next 3 ingredients, mix well and cover and cook over low heat for 30 minutes. Drain pineapple, reserve syrup, add pineapple chunks, green peppers and onions to meat. Cover and cook over low heat 5 minutes. Combine remaining ingredients in a small bowl. Mix well until blended. Add to meat, slowly stirring constantly for 8-10 minutes. Serve over cooked rice.
