Eggplant Filling

8 Dried black mushrooms
1/2 lb Lean pork
1 Scallion stalk
1 sl Fresh ginger root
2 tb Soy sauce
1 tb Sherry
1/2 ts Salt
1/2 ts Sugar

Soak dried mushrooms.

Mince or grind pork. Mince scallion, ginger and soaked mushrooms; combine with pork.

Blend in remaining ingredients. VARIATION: For the dried black mushrooms, substitute 10 water chestnuts.
