Pork Ribs With A Barbecue Sauce

8 Barbecue-flavoured pork ribs

Barbecue Sauce
1 ts Olive oil
4 Salad onions; trimmed and finely sliced
1 Red chilli; deseeded and finely diced
1 tb Red wine vinegar
1 397 g; (14oz) can chopped tomatoes
1 tb Clear honey
Salt and freshly ground black pepper

Barbecue or grill the ribs on a moderate heat for 20-25 minutes, turning occasionally.

Meanwhile make the sauce; heat the olive oil in a saucepan add the salad onions and fry for 1 minute. Stir in the chilli and fry for a further minute.

Add the vinegar then stir in the tomatoes and simmer gently for 5 minutes. Stir in the honey and seasoning, and simmer for a further 5 minutes, stirring occasionally.

Serve the pork ribs with the barbecue sauce. Delicious accompanied with egg noodles.
