Banana Curried Schnitzel

6 Pork schnitzels
1 tb Curry powder
1 c Mango chutney
Toothpicks
2 Eggs 2 1/2 c Coconut


Lay schnitzels out on a board. Trim off any sinew. Beat to an even shape with a meat mallet.


Peel bananas and cut in half.


Mix curry powder and mango chutney together and spread over schnitzels.


Place half a banana on each piece of meat and fold together like a parcel. Secure with a toothpick.


Beat eggs together in a bowl. Dip meat parcels into egg mix.


Place coconut on a plate and roll meat in coconut.


Place in a well greased baking dish. Bake at 180 degrees C for 25 minutes. Turn often during cooking time.
