Baked Stuffed Yams With Sausages
6 Louisiana yams; baked
1/4 c Sugar
1 Lemon; juice and grated rind
1 ts Cinnamon
12 Pork sausages; cooked
Scoop yam pulp into mixing bowl and blend with next three ingredients. If desired, substitute juice of small orange or 1/2 cup pineapple juice. Whip fluffy; refill yam shells. top with little pork sausages and return a few minutes to a hot oven (450 degrees) just before serving.
