Herbed Pork and Apricot Loaf

500 g Minced pork
1 sm Onion; finely chopped
1 pk MAGGI Apricot Sauce Mix
1/4 c Dried apricots; chopped
1/4 c Chopped parsley
1 Egg
1 ts Dried thyme or 2 teaspoons fresh thyme leaves
1 ts Ground nutmeg
Freshly ground black pepper
3 Bacon rashers; cut into strips (3 To 4)


Combine all the ingredients, except the bacon, in a bowl.


Mix thoroughly.


Pack into a medium, greased loaf tin.


Place the bacon strips over the top of the loaf.


Cook in a preheated oven, 180 C, for 50-60 minutes or until cooked.


Turn the loaf out and serve hot or cold.
