Ham Bean Soup

1 lb. dry navy beans
3 qts. water
1 meaty ham bone
1 tbsp. salt
3 carrots, thinly sliced
1 med. onion, chopped
1 c. celery, chopped
2 c. potato, diced
1 c. tomato juice
1 tsp. sugar
1/4 tsp. pepper


Put beans and 3 quarts of water into a large pan. Bring to a boil and boil for 2 minutes. Let beans soak in cooking water at least one hour or overnight. DO NOT DRAIN. Add ham and salt, boil slowly 1 1/2 hours. Add more water, if necessary. Add remaining ingredients. Simmer covered until beans are soft, about 1 hour.
