Ham and Swiss Cheese Quiche

Unbaked 9" pie shell with high edge
3 eggs, separated
1 1/2 c. diced, cooked ham
1 c. grated Swiss cheese
1 c. half & half, scalded
Dash each of pepper & nutmeg
1/4 tsp. salt

Brush pie shell with lightly beaten egg white and bake in preheated 350 degree oven for 5 minutes. Put ham in shell. Sprinkle with cheese. Beat egg yolk with cream and seasonings; pour over cheese. Bake at 350 degrees for 25 minutes or until set. Serve warm or cool. 6 servings.
