Ham and Eggs Brunch

12 slices white bread, crusts removed, buttered
3 c. diced ham
4 oz. can mushroom pieces, drained
1/2 c. (each) chopped green pepper (optional), melted oleo
4 tbsp. chopped onion
1 c. shredded cheese
6 eggs
2 1/2 c. milk
1/2 c. tsp. salt
Pepper to taste

Butter 6 slices bread and place buttered-side down in a 9x13 pan. Cover bread with ham, mushrooms, green pepper, onion and cheese. Dice remaining bread and place over cheese. Beat eggs and add milk, salt and pepper; pour over bread; drizzle oleo over top and sprinkle with paprika; cover with clear plastic wrap and refrigerate overnight. Bake 1 hour at 350 degrees; serves 10 to 12.
