Crustless Ham and Potato Slice

1 tb Vegetable oil
2 md (300g) onions, chopped
1 sm (150g) red pepper, chopped
250 g Ham, chopped
6 Eggs, lightly beaten
130 g Can creamed corn
1/4 c (20g) grated parmesan cheese
1 ts Chicken stock powder
2 tb Chopped fresh parsley
2 md (300g) potatoes, peeled, grated
3/4 c (90g) grated tasty cheese
1/4 c (20g) grated parmesan cheese extra

Grease shallow ovenproof dish (2-litre/8-cup capacity). Heat oil in pan, add onions and pepper, cook, stirring, until soft; then drain on absorbent paper, cool.

Combine onion mixture with ham, eggs, corn, cheese, stock powder, parsley and potatoes in medium bowl. Pour the mixture into the prepared dish, sprinkle with combined tasty cheese and extra parmesan cheese.

Bake in a moderate oven for about 30 mins or until the mixture is set. Grill until top of slice is browned, and served with a tossed salad, if desired.
