Corn and Ham Chowder

1 c. diced ham
15 oz. can cream style corn
1/4 c. chopped onion
1/2 c. chopped celery
1/2 c. thin sliced carrots
2 c. diced potatoes
1/4 tsp. pepper
Salt to taste
2 c. milk
1/4 c. flour
1/4 c. margarine


Place potatoes, carrots, celery, onion and ham in large saucepan. Cover with 2 cups water and cook until potatoes are just tender, about 10 minutes. Make white sauce: Melt margarine in saucepan, stir in flour. Gradually add milk, salt and pepper, stirring constantly until thickens. Add corn and mix thoroughly. Add to vegetable mixture and heat thoroughly. Do Not Boil! Sprinkle Parmesan cheese on top and serve. Variation: Add 2 cups shredded Cheddar cheese to white sauce.
