Baked Ham and Cheese Omelet

1 lb. Monterey Jack cheese
2 c. finely chopped ham
1/2 c. melted butter or margarine
1 tsp. baking powder
1 dozen eggs
Salt and pepper to taste
5-6 drops Tabasco sauce
1 pt. small curd cottage cheese

Preheat oven to 400 degrees. Melt butter; pour half into a 9x13 pan. Sift flour and baking powder together. Beat the eggs, season lightly with salt and pepper. Add 5-6 drops Tabasco sauce. Stir in the flour mixture, ham and Monterey Jack cheese, cottage cheese and remaining butter. Pour into the pan and bake at 400 degrees for 30-45 minutes, or until puffed and light golden brown and knife comes out clean. Cut into squares and serve. Serves 12.
