Brunch Souffle

1 1/2 lbs. pork sausage
9 eggs, slightly beaten
3 c. milk
1 1/2 tsp. dry mustard
1 tsp. salt (optional)
3-4 slices bread, cut into 1/4 inch cubes (3 c.)
1 1/2 c. shredded cheese


Prepare night before. Brown sausage - drain. Spread in 9x13x2 pan. Beat eggs. Blend in milk, mustard, (salt), bread cubes and cheese. Pour mixture over sausage. Cover pan and refrigerate overnight. Uncover and bake at 350 degrees for about one hour.
