Brunch Eggs

1 pkg. pork sausage, browned and drained
8 oz. cheddar cheese, shredded
2 1/2 c. milk
1/4 c. diced celery and black olives
12 slices bread, crust removed, cubed
6 eggs, beaten
Onion, green pepper or chives

Grease 9 x 13 inch pan. Lay bread on, then sausage, cheese and other ingredients, except for eggs and milk. Beat eggs until bubbly and add milk. Pour over ingredients in pan. Cover with Saran Wrap and refrigerate overnight. Before baking: mix 1 can cream of mushroom soup and 1/2 cup milk. Can also add a few more diced black olives for color. Spread over refrigerated ingredients and bake at 350 degrees for 1 hour. Can serve with hash browns and fresh fruit.
