Breakfast Sausage

2 lbs. lean pork
1 lb. pork fat


Grind with medium blade. Put 2 or 3 large onions in behind the meat and fat and grind. Add 1/2 cup chopped fresh parsley or 1/3 cup dried, 1 tablespoon each chopped garlic and chili peppers, 1 teaspoon each crushed hot pepper and ground black pepper. One half teaspoon each thyme, and allspice and 2 teaspoons salt. Mix all together with hands, then with wooden spoon until smooth. Will be spicier after it sets. Add 1/4 cup ice water a few drops at a time and beat well after each addition. This can keep meat from crumbling when sliced.
