Spinach with Ham

2 cups cooked spinach
(2 lbs fresh or 2 pkgs frozen spinach)
3 slices cured ham
1 garlic clove -- peeled
1/4 cup olive oil
salt -- if necessary


Drain spinach well and chop coarsely. Heat 1/4 cup olive oil and fry garlic clove until golden. Remove and discard clove. In the same oil, fry the ham cut into small pieces.

When ham is lightly browned, add spinach. Toss continually while frying for 1 to 2 minutes and serve.
