Maple-Glazed Smoked Pork

1 tb Unsalted butter
2 tb Pure maple syrup
1 ts Dijon mustard
1/8 ts Ground red pepper
2 ts Bourbon; if desired
8 oz (4 slices) boneless smoked pork chops

Melt butter in 10-inch non-stick skillet over medium-high heat. Add maple syrup, mustard and red pepper. Mix well and cook several seconds until bubbly. Add bourbon, if using.

Add pork slices. Cook, turning several times, until edges of meat are deeply glazed, 4 to 5 minutes.
