Apple-Stuffed Pork Chops

1 c Croutons
1/2 c Apple; peeled, seeded, minc
1/2 c Cheddar cheese; finely grated
2 tb Golden raisins; seedless
1/4 ts Salt
1/4 ts Ground cinnamon
2 tb Fresh orange juice; strained
2 tb Unsalted butter; melted
6 Pork chop; 2-inch thick
1/2 ts Salt; to taste
1/4 ts White pepper; to taste

Combine croutons, apples, cheese, raisins, 1/4 teaspoon salt, and cinnamon-mix well. Add orange juice and butter-mix well. Cut a pocket into each of the pork chops. Season the pockets of each with salt and pepper. Spoon stuffing mixture into the pockets of the chops. Place into a shallow baking pan. Bake at 350 degrees for 60 minutes. Cover with foil bake @ 350 degrees for 30 minutes. Serve hot.
