Croquetas De Jamon

1/4 lb Jamon serrano; cut 1/4" cubes
1/2 lb Jamon York (baked ham); cut 1" cubes
1/2 tb Sweet paprika
1 ts Ground cumin seed
2 Hard-boiled eggs; finely chopped
1/4 c Finely-chopped parsley
1 Egg
2 oz Grated Manchego
1/2 c Flour
1 c Extra-virgin olive oil

Place jamon serrano, jamon York, paprika, cumin seed, hard-boiled eggs, parsley and egg in food processor and blend until smooth. Remove to mixing bowl, add Manchego and 3 tablespoons flour, stir well to combine. Roll into 1-inch ovals and roll into flour. Heat oil in an 8- to 10-inch frying pan until 375 degrees. Cook croquetas in oil until dark golden brown, 5 to 6 at a time. Drain on paper towels and serve warm. This recipe yields 4 servings as tapas.
