Sweet and Sour Pork Philippine Island

8 oz Lean boneless pork loin
1/2 c Chicken bouillon
1/4 md Green pepper, diced
ds Garlic powder
1/2 c Canned crushed pineapple, no sugar added
Artificial sweetener to equal 1/2 ts sugar
1 tb Vinegar
1/2 c Cooked enriched rice
1 md Tomato, cut into 6 wedges
Salt to taste
1/2 ts Chopped fresh parsley

Broil pork 4 inches from source of heat 5 minutes on each side. Remove; cool; cut into 1-inch cubes. Place in a nonstick skillet with bouillon, pepper and garlic. Simmer, stirring, until liquid has reduced to half its volume. Add pineapple, sweetener and vinegar. Fold in rice and tomato. Season to taste. Heat thoroughly over low flame, stirring gently, until liquid is absorbed. Sprinkle with parsley.
