Paksiw Na Pata (Sweet and Sour Pork Hock)
4 lb Pork hock (pata) leg
1 sm Fresh garlic
1 ts Pepper corn
1 c Vinegar white or cider
3 c Water
1/2 c Sugar
1 c Soy sauce
1/2 c Dried banana flower *
* you get this in oriental store or ask for dried lotus or cabbage
flower. Unless you come across with Filipino section and asked for
dried banana flower. Procedure: Put all the ingredients in the pot or
in the pressure cooker. Be sure that it will fit the pot or the
pressure cooker with the 4 lbs of pork hock. It takes longer to cook
when you will use the pot. It takes at least two hours or more when
you cook it in medium fire. But when you use pressure cooker it will
not even take hours and the pork hock will be soft and tender. Be
sure to taste it so you can even add what is missing and still let it
stay in the stove in slow fire. Serve it while hot.
