Pork Steaks and Corn Dressing
3 Pork blade steaks, cut 1/2"
1 ts Salt
1 Onion, medium-size, chopped
1 cn Corn, cream-style(16oz)
1 tb Lard
1/8 ts Pepper
6 c Bread cubes, dry
1 ts Sage
Brown steaks on both sides in lard; remove from pan and season with 1/2
teaspoon salt and the pepper.
Add onion to pan drippings; brown lightly.
Add bread cubes and corn to onion; sprinkle with sage and remaining
salt. Mix to combine.
Place stuffing in a 13x9-inch roasting pan or baking dish; place steaks
on top of stuffing.
Cover tightly with foil; bake in preheated 325'F. oven 1 hour, or until
meat is done.
Sprinkle with paprika.
NOTE: To obtain 6 cup dry bread cubes, heat 7 cups fresh bread cubes in
preheated 325'F. oven 10 minutes.
