Sesame Pork Salad

1 1/2 c Pork; cooked/slivered
3 c Cooked rice
4 oz Snow peas; trimmed and slice d
1 md Cucumber (seeded); p eeled/julienned
1 md Red bell pepper; julienned
1/2 c Green onion; sliced
2 tb Sesame seeds; toasted
1/4 c Chicken broth
3 tb Rice or white wine vinegar
3 tb Soy sauce
1 tb Peanut oil
1 ts Sesame oil

Combine pork, rice, snow peas, cucumber, bell pepper, green onions and sesame seed in large bowl. Combine chicken broth, rice wine vinegar, soy sauce, peanut oil and sesame oil in small covered jar; shake to mix well. Add to salad; toss lightly. Serve slightly chilled or at room temperature. May substiture chicken for pork if desired.
