Pork Chops in Wine

1 lg Onion; sliced
3 tb Oil, salad; hot
1/4 c Butter (or marg.); softened
1/2 ts Mustard, dry
1 1/2 ts Slat
1/8 ts Pepper
6 Pork loin chops; 1/2" thick
1 c Wine, dry white
3 tb Parsley; chopped

Saute onion in oil in a large skillet; drain on paper towels, and set aside. Reserve drippings.

Combine butter, mustard, salt, and pepper; stir to make a paste and spread on both sides of chops. Brown chops on both sides in reserved drippings; pour off drippings. Return onions to skillet; add wine. Cover and simmer 1 hour or until chops are done. Sprinkle with chopped parsley before serving.
