Pork Chops and Rice

6 Pork chops
2 tb Oil
1 c Uncooked rice
Hot water
1 pk Onion soup mix
2 tb Pimentos, diced
1 cn Mushrooms (4 oz. drained and reserve liquid)

Brown pork chops in oil, spread uncooked rice on bottom of 13 x 9 inch pan. Reserve 1 tablespoon of onion soup mix, spread remaining onion soup over rice. Spread mushrooms and diced pimientos over rice. Add enough hot water to mushroom liquid to make 3 cups of liquid, and pour over rice. Arrange browned pork chops over rice and sprinkle the 1 tablespoon onion soup mix over chops. Cover tightly with foil and bake 45 minutes to 1 hour. Remove foil and bake 10 minutes more or until liquid evaporates.
