Pork and Mango Stir Fry

1 tb Olive oil
15 g Butter; (1/2oz)
2 Shallots or small onions; finely chopped
375 g Pork fillet; cut into strips (12oz)
1 sm Red pepper; cut into strips
125 g Broccoli florets; blanched (4oz)
1 Mango; peeled and diced
1 tb Soy sauce
Salt and freshly ground black pepper

Heat the oil and butter in a large frying pan or wok.

Fry the shallots or onions and pork over a medium heat for 5-6 minutes, stirring occasionally.

Add the pepper and broccoli and cook for a further 2 minutes.

Stir in the mango, soy sauce and seasoning to taste. Heat through and serve immediately with rice or noodles.
