Pansit (Noodles with Pork)

1 tb Oil
2 Cloves garlic, crushed
1 lb Pork sliced thin OR 1 lb Ground pork
1/2 lb Fresh shrimp, chopped
1 Small onion, sliced
6 Dried mushrooms (pre-soaked and sliced thin)
2 1/2 c Chicken broth
Salt and pepper to taste
1 pk Long rice
2 pk Dried noodles
Green onion, sliced thin


Heat oil, fry garlic and pork til slightly browned Add shrimp and fry til shrimp turns pink. Add onions and mushrooms. Fry about 1 minute, then add chicken broth, salt and pepper; bring to a boil. Then simmer about 5-10 minutes. Soak long rice til soft, then cut into 2" lengths. Add long rice, then noodles. Garnish with green onions.
