Loin of Pork with Rosemary and Garlic 3 md Cloves garlic
1 T Dried rosemary
1 t Salt
1/4 t Freshly ground black pepper
1 3/4 lb Boneless pork loin roast
Preheat oven to 400 degrees. Meanwhile, peel and coarsely chop
garlic. Crush garlic, rosemary, salt, and pepper together in mortar
with pestle until mixture is paste-like. Rub mixture over entire
surface of pork. Place pork in roasting pan, on rack if desired.
Roast on middle rack of oven 50 to 55 minutes, or until meat
thermometer registers 150 degrees. Cover pork loosely and let stand
at room temperature until ready to serve. To serve, place pork on
carving board or platter and slice thinly.
