Lime Marinated Pork
1/2 c Fresh lime juice
2 tb Vegetable oil
2 tb Brown sugar
1/2 ts Salt
1/4 ts Ground coriander
1/4 ts Ground ginger
1 lb Pork shoulder country style
Combine marinade ingredients. Reserve 1/4 cup. Place pork in zipper lock
bag. Add remaining marinade; seal and chill 2-4 hours, turning bag over
once. Prepare grill for medium direct heat. Spray grid with cooking spray.
Drain and discard marinade from pork. Place pork on grid, grill covered 6
minutes per side. Brush pork with reserved marinade; grill 3 more minutes
per side or until pork reaches and internal temperature of 160 degrees F.
