Green Chile Stew with Pork
3 lb Boneless pork, cubed 1/2"
3 tb Peanut oil
3 Stalks celery, chopped
2 Medium tomatoes, diced
7 Green chiles, roasted, peeled, seeded, chopped
4 Cloves garlic, peeled and crushed
Chicken stock or water to cover
Salt to taste
Jalapeno salsa (optional)
Brown the pork in oil in batches in a heavy iron skillet. Place the
meat in a 3-4 quart covered casserole and add the remaining
ingredients. Deglaze the skillet with the chicken broth (water) and
