Green Chile Stew with Pork

3 lb Boneless pork, cubed 1/2"
3 tb Peanut oil
3 Stalks celery, chopped
2 Medium tomatoes, diced
7 Green chiles, roasted, peeled, seeded, chopped
4 Cloves garlic, peeled and crushed
Chicken stock or water to cover
Salt to taste
Jalapeno salsa (optional)


Brown the pork in oil in batches in a heavy iron skillet. Place the meat in a 3-4 quart covered casserole and add the remaining ingredients. Deglaze the skillet with the chicken broth (water) and add to the casserole. Barely cover the ingredients with water or broth. Cover and simmer until the stew is thick and meat very tender,
