Jambalaya

medium onion
2 to 3 stalks celery
1 green pepper
4 Tbsp. butter
16 oz. can of tomatoes
2 Tbsp. flour
1/8 tsp. cayenne
1/2 cup water
Pepper
1 cup ea. ham, Shrimp, chicken
Cooked rice


Coarse chop onion, celery, pepper and saute in butter. Add tomatoes, stir. Add flour, stir and cook on medium heat 4 to 5 minutes. Add seasonings, stir well. Add water, ham and chicken. Simmer 5 to 10 minutes. Add Shrimp last, simmer just long enough to heat Shrimp. Serve over cooked rice. Note: Tabasco may be used instead of or in addition to cayenne.
