Jambalaya

1 Tbsp. shortening
2 cups diced cooked ham
1 Tbsp. flour
1 1/2 cups tomato juice
1/3 cup minced onion
1/3 cup chopped green pepper
1 cup cooked or canned Shrimp
1/4 tsp. garlic powder
Dash of red pepper
Black pepper to taste
2 cups cooked rice


Melt shortening in heavy skillet. Add ham and cook lightly. Add flour and blend. Add tomatoes, onion and pepper; cook covered until sauce is thickened. Add Shrimp and rice. Season and heat thoroughly.


Serves 5-6
